Avocado toast


  • slices of bread the weirdest you can find, just for the sake of it
  • 1 avocado
  • a couple of teaspoons lemon juice
  • a few goji berries
  • chives
  • sesame seeds
  • salt
  • pepper


  • Start by cutting 2 slices of bread. We’re in lockdown, so I baked my own just to be over the top. It’s a recipe called “Sonja’s bread”, basically a bread with almonds about ¾ rye and ¼ wholemeal wheat. Tastes as good as it looks. If you prefer, you can toast your bread while you do the next step.
  • Remove the flesh of the avocado and use a spoon to mash it. Then add lemon, salt and pepper to taste. Once you are happy with the result, spread it on the slices of bread.
  • Then add the goji berries, finely cut chives and sprinkle with sesame. That’s it, you can serve now.
  • If you want to keep your shape, just stick to eating the above for brunch. If you are hungry like me add a full English breakfast to make up the lost calories of last night’s 10K run.
