Start by cutting 2 slices of bread. We’re in lockdown, so I baked my own just to be over the top. It’s a recipe called “Sonja’s bread”, basically a bread with almonds about ¾ rye and ¼ wholemeal wheat. Tastes as good as it looks. If you prefer, you can toast your bread while you do the next step.
Remove the flesh of the avocado and use a spoon to mash it. Then add lemon, salt and pepper to taste. Once you are happy with the result, spread it on the slices of bread.
Then add the goji berries, finely cut chives and sprinkle with sesame. That’s it, you can serve now.
If you want to keep your shape, just stick to eating the above for brunch. If you are hungry like me add a full English breakfast to make up the lost calories of last night’s 10K run.
