Feta Burgers with crushed new potatoes

  • 800 gr beef mince
  • 1 onion finely chopped
  • 2 cloves of garlic minced
  • 1 small tomato grated
  • 2 tbspn olive oil
  • 100 gr feta
  • 1 egg
  • 3 tbspn breadcrumbs
  • 6-7 sprigs of fresh thyme
  • 1 teaspoon dried oregano
  • 500 gr baby potatoes
  • Olive oil
  • salt & pepper to taste


Crash new potatoes

  • For the crash baby potatoes, parboil in salted water for 10 minutes. Drain and once in room temperature crash down with the palm of your hand and transfer them on a large baking tray that can accommodate both potatoes and burgers..

Feta stuffed burgers

  • In a large bowl place the mince meat and add in all the rest of the ingredients except for the feta.
  • Once the mince meat in well mixed with the herbs take some of the mixture, open it up in the palm of your hand, place some feta cheese and fold in the edges of the patty to cover.
  • Set aside and continue with the rest of the mixture.
  • Place in a well preheated oven at 180C and bake for 30-35 minutes.
