My favourite 5 pumpkin recipes

Pumpkins are just the thing for autumn. Below I put together my favourite 5 pumpkin recipes so that you never run out of inspiration.

Pumpkins and squashes are just about on every stall every autumn. One tasty vegetable that can make so much more than one dish. I haven’t made a traditional Greek one just yet but below I share my modern pumpkin favourites.

Aubergine with pumpkins and smoked anchovies

I am still enjoying the last of the ripe aubergines, this dish makes the perfect turn of the season!

We are not in winter mode just yet, but there is nothing more nurturing than a wholesome soup, especially one with roasted pumpkin.

Fabulous recipes. I love making pumpkin pasta sauce, but that about as creative as I get. When my kids were little I stuck/hid pumpkin in everything, from oatmeal to soups and stews… pancakes, you name it. It’s just such a healthy food and it’s one thing canned that is a high quality ingredient here.

Thanks so much Mimi! It is such a healthy food indeed. I so enjoy scooping out pumpkins, I admit my favourite is roasting 😉 but pumpkin pancakes are next!
